Day 9

Today I have a great recipe that I want to share that we had tonight for dinner. It came from the Body For Life Cookbook entitled Eating For Life. What a great resource it has been to help us plan a healthy weekly menu. It helps our trips to the grocery store as well because it has pictures of the actual ingredients that you will need for each recipe. I found a used copy online for right at $20.00 plus shipping and handling.

The recipe is called Singapore Shrimp and it takes about 25 minutes to cook. This meal was cooked Vineyard style because of some substitutions that were made due to lack of some ingredients.

The ingredients are: 1 cup of jasmine rice uncooked (we substituted brown minute rice), 1 package (12 oz) soybeans in the pod ( we substituted frozen mixed veggies), 1 pound cooked frozen shrimp peeled and deveined, 1 1/2 tsp cornstarch (we substituted flour), 1/8 tsp white pepper, 1/4 cup reduced -sodium chicken broth, 1/4 cup ketchup, 1 tbsp lite soy sauce, 2 tsp olive oil, 1/4 cup egg substitute.

The directions are: 1. Prepare brown rice as directed and keep warm. 2. While rice is cooking prepare frozen vegetables as directed. Then mix with rice. 3. In a mixing bowl stir together shrimp (you can rinse the shrimp in cool water first to defrost), flour and white pepper. 4. In a mixing bowl combine chicken broth, ketchup, and soy sauce. 5. Heat olive oil in a skillet over high heat. Add shrimp mixture to skillet and stir fry for 2 minutes. Then add chicken broth mixture and stir fry for 1 more minute. 6. While stirring slowly pour egg substitute into shrimp mixture. Continue to cook, stirring constantly, for another 30 seconds. 7. Plate the rice and veggie mix and top with shrimp stir fry. That is it and you can play around with different ingredients to suit your taste. You might add garlic, ginger or to spice it up 2 tbsp of chili garlic sauce (found in the Asian food section of the grocery store).

We had plenty with some left over and it was great. I give Him all of the glory for this day and for the day that I will finally be half the man that I am now.
